PIZZA!!

My kids love pizza...I love pizza...BUT I can't just have one slice...so instead I needed an alternative!

That's when I discovered Flatout Flat breads and turned them into the most amazing flat bread pizza!!


We have made them a few times and everyone loves them!

Here are some ideas to try!

BBQ Chicken Pizza
Spread small amount of BBQ Sauce on flatbread. 
Toss cooked/chopped chicken in a small bag with BBQ sauce
Add Chicken to Flatbread
Top with Blue container's worth of cheese

Count as 1 Red, 1 yellow, 1 blue, and 1 orange

Buffalo Chicken Pizza

Spread small amount of hot Sauce on flatbread. 
Toss cooked/chopped chicken in a small bag with hot sauce
Add Chicken to Flatbread
Top with Blue container's worth of cheese (cheddar and blue cheese are great)
Top with diced Celery or chopped scallions

Count as 1 Red, 1 yellow, 1 blue

Veggie Pizza

Spread small amount of tomato sauce to flatbread
top with any chopped veggies
top with a blue container worth of cheese of your liking

Count as 1 Yellow, 1 Blue, 1/2 Green (or more depending on how much you add), I used so little on the tomato sauce that I didn't count it (also chose one that was low in sugar)

Veggie and Chicken (or Shrimp) Pizza

Same as above, but add 1 Red container of cooked chicken or shrimp

Count as 1 Red, 1 Yellow, 1 Blue, 1/2 Green (or more depending on how much you add), I used so little on the tomato sauce that I didn't count it (also chose one that was low in sugar)

Preheat oven to 350 and bake for 5-7 minutes
ENJOY!!

These are just some ideas!  Be creative!  We have used this for using up left overs, quick lunches for the whole family, or Mama's dinner while the family eats greasy pizza delivery! 


3 Day Refresh

I have done two rounds of 3 day refresh and have my third ready and waiting for me!

The first time was scary and hard, but MUCH better than I thought after reading reviews online....so I figured I would write my own "review".

First, let's be real here....you will NOT be running to the bathroom constantly or fearing you will not make it!  You do need to drink a lot of water!  If you are a heavy caffeine user...start cutting back at least a week ahead of your refresh!  The first round I did, I did NOT listen to the caffeine advice and man did I have a bad migraine on day 1 and into the beginning of day 2.  Caffeine withdrawals were BAD!  The second round I did, I started cutting back and it was MUCH better!

So here's what you need to know.  You will eat, but only fruits and veggies on a strict schedule!  This is not a weight loss magic bullet!  In some cases, people do not lose weight!  One my first round and my second round, I lost an average of 5 lbs and several inches overall.  The biggest reason I LOVE this program is that it really helped with my bad relationship to food.  When it was all said and done, I didn't feel like I needed to run to food to feel better!  I knew to listen to my body and know when I was really hungry.  Starting the 21 day fix the day after I did the refresh...I felt like I was eat WAY too much food.  I would highly recommend the 3 day refresh to someone who wants to reset their relationship with food, reset their body, eat cleanly and start their weight loss journey, or get back on track.

So in a nutshell....Day 1 was hard...didn't feel great, headaches, run down, etc.  Day 2 was much better.  Still had low energy, but headaches went away during this day.  Day 3 was much easier!  Honestly, by Day 3 I could have kept going, but was happy it would be over! :)




What you get in the kit?

You get your Fiber Sweep and 2 Vanilla Fresh packets per day.  You also get your eating guide and program guide.

What else do you need to get?

You will need 1 packet/serving of Shakeology per day.  (depending on which kit you bought, some come with it, some do not)

Best part about it?

It's only 3 days and in my case I have lost lbs and inches every time!

Worst part about it?

The vanilla fresh shakes are NOT my favorite, but highly recommend blending them with ice/water/vanilla extract/pumpkin pie spice or extract.  Also, making my Shakeology with only water is not great!  Honestly, I make sure the water is cold and drink it QUICKLY!

Amazing fresh salad!

Arugula Salad

Ingredients:

Arugula
½ Sweet or yellow Onion
1 Small Bell Pepper
2 Nectarines or Peaches
Crumbled Goat Cheese


Directions:

  1. Start by placing Arugula in a large salad bowl
  2. Slice ½ onion into thin slices and place on top of arugula
  3. Slice Bell Pepper into ¼ inch slices and place on top
  4. Cut Nectarines or peaches into wedges and place on top
  5. Sprinkle salad with crumbled goat cheese
  6. Serve with salad dressing of your choice (my current favorite is Annie’s Naturals Balsamic Vinaigrette)

21 Day Fix Container Count:  2 Green (about 1 ½ cups of arugula and ½ cup of peppers and onions), 1 Purple, 1 Blue, 1 Orange

Sweet Potato Crust Quiche Recipe

After a long weekend and no recent trip to the super market, I was left to try to figure out dinner while stuck at home with 1 kid napping.

So, Sweet Potato Crust Quiche it was!

1 medium sweet potatoes
1 Small Onion (chopped)
1 Bell Pepper (chopped)
2-3 cloves of Garlic (minced)
Frozen or Fresh Spinach (or any leafy green)--Frozen spinach should be thawed and drained
Handful of cherry tomatoes
4 slices of Turkey bacon (cooked) or about 1 cup Cubed Ham
Olive oil
Cooking Spray (I used coconut oil spray)
8 Eggs
1/2 Cup of Shredded Cheddar Cheese
Salt and Pepper to taste

Directions:


  • Preheat oven to 400°
  • Spray Pie plate with cooking spray
  • Slice Sweet potato to 1/8" and layer on bottom and sides of pie plate
  • Spray with cooking spray and bake for 15 minutes
  • Remove from oven and set aside.  Reduce oven to 350°
  • While the sweet potato is baking, heat olive oil (enough to coat the pan) in a skillet and cook onions and peppers until soft.  Add garlic and continue cooking.  Add spinach (if fresh allow to wilt. If frozen--ensure you have thawed and drained the spinach before)  
  • Add bacon or ham to warm and remove from heat.
  • Beat 8 eggs in a bowl and add 1/2 cup of cheddar cheese
  • Add Veggie mixture to egg mixture to combine add cherry tomatoes
  • Pour over sweet potato in pie plate and bake for 30-35 minutes until it is firm and slightly browning on top

I made two 1 with turkey bacon and 1 with cubed ham.  I would saw you can use any veggies you have in the fridge.  We happen to have an abundance of cherry tomatoes from our garden and I threw some in last minute, they added a nice flavor to it.

I counted this as 1 Yellow, 1 Green, 1 Blue, 1 ½ Red, and 1 tsp

Grilled Chicken Sausage and Veggies


Grill your favorite Chicken Sausage
Grill Zucchini, Summer Squash, Onions, Bell Peppers, Mushrooms (drizzled with olive oil)
Eat for dinner

Save another portion of each and put in a Flat Out Flatbread the following day with Spicy Mustard for Lunch!!

Putting myself out there

Posted on Facebook the other night!!  Scary thing to put yourself out there, but feeling strong that I did!

Sorry about the long post! I don't normally do this, but my wonderful coach encouraged me to get out of my comfort zone. So here goes!
I have struggled with my weight my whole life. I was bullied as a kid because of my weight, I was told if I lost weight I would be better at sports and other activities. I never felt good enough. I have had low self-esteem and really bad body image issues my whole life. I've never publicly said any of that! So why now? Right after Jackson was born, I had several complications and health issues. I was told I needed to lose weight, but it didn't sink in. I wasn't feeling well, I hated how I looked, but I kept putting everyone else, and everything else first! Well after lots of prayer and consideration, I decided to change all of that earlier this summer. Eating healthy, exercising, and spending some time on me - that was my mission! So I embarked on this journey and in mid-July I started drinking Shakeology daily, I did the Beachbody 3 day refresh and started in on the 21 Day Fix working with my coach, Kelsey! I have a lot more energy, I feel better, I get excited about making fun foods that the whole family will love and are "fix approved". I have not let anything stop me. I have been bigger than my excuses. I have lost 16 pounds since early July (5.25 inches just in the last 21 days)...and I'm loving this program so much that I signed on to be a coach to others. Not because I’m done with my journey, but rather because I have a long journey left to go and I want to help others make these amazing changes in their lives.

All workouts are done in the comfort of your own home, 30 minutes a day…I do mine while Jackson naps and after the kids go to sleep for the night! Just started another round of 21 day fix yesterday and ready to kill the next 10 pounds!


Long Journey

I have embarked on a long journey of living a healthier life.  With that, I hope to finally, once and for all, achieve my long term weight loss goals.  I have struggled with my weight all my life.  Being told as a child that I was fat, and would be better at sports if I just lost weight.  I have dieted, done weight watchers, done group training, done fitness challenges and each time I may have short term successes, but have not made life style changes.  This time, I'm in this for the long haul.  I want to feel better about myself, emotionally and physically.

I made this decision at the beginning of the summer.  I'm not just days away from being done with my first round of the 21 day fix and today, I signed up to be a coach.  Why you ask?  Well because if I become a coach, I have to be accountable to not only my coach, but anyone else looking at me for coaching.

I'm happy with my decision.  I'm nervous about my decision.  And I'm excited about my decision.

I will also be posting on here.  For who ever to read.  Recipes, pictures, struggles, successes, rants, etc.

I have been private about my struggles for too long.  I'm ready to put it out there for the world to see.
