Ingredients:
Arugula
½ Sweet or yellow Onion
1 Small Bell Pepper
2 Nectarines or Peaches
Crumbled Goat Cheese
Directions:
- Slice ½ onion into thin slices and place on top of arugula
- Slice Bell Pepper into ¼ inch slices and place on top
- Cut Nectarines or peaches into wedges and place on top
- Sprinkle salad with crumbled goat cheese
- Serve with salad dressing of your choice (my current favorite is Annie’s Naturals Balsamic Vinaigrette)
